Paul & Maurice de Watteville, 15th and 16th generation on a family estate since 1543. Organic, and pioneers of vinification in terracotta amphorae. It's their Chasselas we pour most often.
Raymond & Violaine Paccot, a benchmark of La Côte. Biodynamic, wines with no added sulphur or yeast. The Amédée cuvée (savagnin) pays tribute to the Count of Savoy.
Vincent Graenicher, organic (with biodynamics in his sights), working and harvesting by hand. His Es Cordelières is classified Premier Grand Cru.
The Dussex family farm dry-stone terraces, horses working the soil. Their Humagne rouge is a wild, distinguished Valais grape.
