Sébastien looks after a living cellar — organic, biodynamic, or simply true — chosen from winemakers we know by their first name, often just a few kilometres away. No dogma: fine traditional wines from La Côte and beyond have their place here too. To drink by the glass on site, or to take home.

Our winemakers, just around the corner
Paul & Maurice de Watteville, 15th and 16th generation on a family estate since 1543. Organic, and pioneers of vinification in terracotta amphorae. It's their Chasselas we pour most often.
Raymond & Violaine Paccot, a benchmark of La Côte. Biodynamic, wines with no added sulphur or yeast. The Amédée cuvée (savagnin) pays tribute to the Count of Savoy.
Vincent Graenicher, organic (with biodynamics in his sights), working and harvesting by hand. His Es Cordelières is classified Premier Grand Cru.

What is a natural, organic or biodynamic wine?
Organic = grapes without synthetic chemicals. Biodynamics = a step further (moon, natural preparations). Natural = made without additives (little or no sulphur, indigenous yeasts). Our cellar is fully living, listed on raisin.digital.
